Radish and Parmesan Salad

Ingredients

2 tablespoons extra-virgin olive oil

1 tablespoon fresh lemon juice

1/8 teaspoon salt

1/8 teaspoon black pepper

4 cups radish greens or salad mix (greens are comparable to flavorful Arugula. Try it!)

3/4 cup sliced radishes

1/4 cup shaved Parmesan cheese
Instructions

Combine olive oil, lemon juice, salt, and pepper in a large bowl, stirring with a whisk.

Add radish greens or salad mix, radishes, and shaved Parmesan cheese

Toss to coat.
Reactions
I wasn't always a radish, or turnip fan to be frank. It wasn't until I tried Mike's veggies from First Light Farm that I was completely won over by the flavors of these fresh delights. Visiting his farm one day, he basically stuffed turnip greens in my face and told me to eat them right then and there. I'm so glad I did! Because they were by far some of the most tasty greens I've ever ate. They are similar to Arugula, but sweeter and more succulent. This salad is a beautiful combination of fresh tastes. I think you'll be surprised!
