Pickled Beet Salad (with goat cheese optional)

Total cooking time: 5 minutes


  • 1 quart pickled beets (Try: Maitland Mountain Farm Pickled Beets)

  • 3 tablespoons extra-virgin olive oil

  • Finely grated zest of 1 lemon, or fresh squeezed lemon or lime juice

  • Fresh Dill and Cilantro to taste

  • Optional: goat cheese to taste (Try: Dancing Goats Dairy Sea Salt Chevre)


  1. Arrange the beets on a platter.

  2. In a small bowl, combine the olive oil and lemon zest (fresh lemon or lime juice).

  3. Drizzle the beets with the olive oil dressing, scatter the dill and cilantro on top.


** This recipe can also be done with boiled beets **



One of my favorite easy meals. This beet salad with Maitland Mountain Farm's delicious pickled beets is the perfect balance and brightness you need to revitalize your senses. I suggest adding some of Dancing Goats Dairy's creamy Sea Salt Chevre to give the dish a little more complexity in flavor.
