Turnip Greens, Homemade Bacon & Garlic

Ingredients

3-4 slices of bacon, chopped (Try: Eva's Farm Organic Butcher Shop Homemade Bacon)

3-4 turnips, peeled and sliced thinly

tops of turnips, washed, thick stems removed, and chopped

2 cloves garlic, minced or pressed

salt and pepper to taste
Instructions

Cut turnip greens. When cutting turnip greens, lay some leaves on top of each other and then roll them up and slice.

Chop the Turnips into slices.

Over medium heat, cook chopped bacon until brown. Remove cooked bacon and set aside.

In the drippings, add turnips in a a single layer. Cook for a few minutes until golden and flip over to the other side.

When both sides are golden, add the green tops and garlic and stir fry until wilted.

Add bacon back to pan.

Taste and add salt and pepper if desired.
** Vegetarian option - remove Bacon **
Reactions
Slightly sauteing the turnips to give them a nice golden color adds a texture that is sometimes missing in boiled turnips. The flavors in this dish compliment each other so well. Salty, sweet, fresh, with a subtle spice. This is a multi-meal dish. Try this recipe in the morning with your egg scramble or any style you prefer, as a starch substitute.
